Raw Broccoli and Arugula Salad

Ingredients

  • 1 small head broccoli, broken up into florets

  • 1 cup packed arugula, washed

  • handful cherry tomatoes, halved

  • 2 tbsp diced red onions (substitute pickled red onions for extra flavor)

  • 2 tbsp extra virgin olive oil

  • 1/2 tbsp unfiltered apple cider vinegar

  • juice from 1/2 lemon

  • 1 tsp freshly ground cracked pepper

  • salt to taste

  • 1 oz crumbled feta to garnish

Instructions

Mix together broccoli, arugula, tomatoes, and onions in a bowl. In a separate small bowl, stir together olive oil, vinegar, lemon, salt and pepper. Toss together with veggies, and crumble feta on top.
