1 small head broccoli, broken up into florets
1 cup packed arugula, washed
handful cherry tomatoes, halved
2 tbsp diced red onions (substitute pickled red onions for extra flavor)
2 tbsp extra virgin olive oil
1/2 tbsp unfiltered apple cider vinegar
juice from 1/2 lemon
1 tsp freshly ground cracked pepper
salt to taste
1 oz crumbled feta to garnish
Mix together broccoli, arugula, tomatoes, and onions in a bowl. In a separate small bowl, stir together olive oil, vinegar, lemon, salt and pepper. Toss together with veggies, and crumble feta on top.
