History

This Asian green is native to China where it is thought to have been cultivated since 500 AD. From China it found it's way to Japanese farms where it thrives even in the coldest snowy environments by growing low to the ground.

How to Store

Keep tatsoi in the crisper drawer, in a plastic bag with a wet paper towel if possible, and use within a few days.

Separate the leaves and rinse thoroughly. If tatsoi has bolted, use the flowers by separating them from the leaves..

Ways to Enjoy

Enjoy the bold flavor of tatsoi raw or very lightly cooked when young. If greens are mature or bolted, braise, saute, or steam them to tenderize the greens and amend the flavor.
