Exactly what does one do with kohlrabi?

i absolutely love kohlrabi. its one of my favorite veggies. i cant ever get too much. i think it taste a little like kale but the structure is different which makes it fun to work with. i do a lot of stirfries in general. I rinse and peel various veggies--usually one or two of --carrots, kohlrabi, parsnips with a green like spinach, kale or chard (excellent if you arent a fan of the flavor of chard as it softens it out) and then either/or onion and garlic. how you want your proportions, is your call but i generally for 4 do 2 cloves of garlic from a garlic press and 1/2 chopped onion that i stirfry in avocado oil or similar for a few minutes. i add 2 shredded carrots, 1 shredded kohlrabi and 1 shredded parsnip (i used a mandolin device to shred sort of like hashbrown in size or smaller) and a few minutes later i add chopped chard (one bunch) or one bunch kale. i add some salt and pepper and let it cook maybe 10 min. this in itself is really good. you can do above recipe but if you want a quick dinner variation: buy a curry paste and add to the mix with some coconut milk. cook some quinoa simultaneously as you do the veggies. voila--now a vegan dish thats yummy. a non vegan version: sometimes i buy some tasty chicken sausages fi the chicken mango or chicken habanero they have at the central coast specialty store are really good for it or you can get any other at any grocery store and chop up and stirfry in a separate frying pan and add on top of the veggies.
