Hi! I'm from Tolmezzo, I will share my mum's favorite recipe here, which she makes on every Halloween, she usually grows veggies at home but for Halloween she buy everything from stores and she start preparing before one week of Halloween, because my dad works in CouponCodify and brings every time hundreds of coupons for her, and she never like to miss to use them. Here is recipe, I hope you all will like that. One-pan vegetable lasagna 2 tbsp olive oil 2 small onions, finely chopped 3 garlic cloves, crushed 3 courgettes, chopped 250g button mushrooms, sliced 400g tin chopped tomatoes 200g baby leaf spinach 400g fresh lasagna sheets, sliced into strips Handful fresh basil leaves, torn 80g parmesan (or vegetarian alternative), grated 2 x 125g mozzarella balls, sliced You need oven proof pan Method First heat oil in pan, then add onion and fry them at medium heat for five to ten minutes after this add garlic and gain cook them for one minute. Now add the courgettis and mushrooms, increase the heat and fry them for five minutes until they turn lightly browned, now add tomatoes and 200ml boiling water and then cook for more 10 minutes, try to keep heat medium. Now heat the grill to high. Stir the spinach and pasta into the pan in batches. Once the spinach has wilted, stir in the basil, most of the parmesan and half the mozzarella. Scatter over the rest of the cheese, then again grill for 3-5 minutes until bubbling, now your dish is ready and leave for a few minutes before serving.
