History

Romans grew and cooked parsnips for broths and stews. Before sugar was widely available, parsnips were used as a sweetener. As sugar became more readily available, the popularity of parsnips started to decline.

How to Store

Keep unwashed parsnips in a perforated, unsealed plastic bag in the bottom of the refrigerator. Will keep for 2 to 3 weeks. If the green tops are still attached, remove them before storing. Cooked parsnips can be refrigerated and used within 3 days. They can be stored for 8 to 10 months when blanched and frozen. Fully cooked parsnip puree will keep frozen to 10 months.

How to Prepare

Rinse well. Trim the root and leaf ends. Small parsnips can be cleaned with a vegetable brush; larger parsnips will need to be peeled. Cook peeled and trimmed parsnips immediately to avoid discoloration or keep them in water with a little bit of lemon juice until ready to cook.

Ways to Enjoy

Parsnips have a nutty, spicy, peppery flavor that is well suited to longer cooking times. They are delicious in stews, casseroles, curies, or oven-roasted on their own.
